Easy Roasted Carrots with Thyme

Ingredients

Carrots or 1 bag of small carrots
2
tablespoons
olive oil
salt & pepper to taste
1
tsp
dried thyme
Instructions
Preheat oven to 400F
Peel carrots. Slice in quarters and then in half to create spears
Combine carrots, oil, salt, pepper and thyme in a bowl and toss to coat.
Spread evenly on a baking sheet, do not overcrowd.
Bake for about 20 minutes or until carrots are fork tender
