I am partnering with ALDI to show you that fresh, healthy eating can fit into your budget. Smoothies are one of my favorite ways to eat my fruits and veggies! They just got stepped up a notch by becoming heartier and more awesome and in bowl form! This rainbow green smoothie bowl will soon be your new go to breakfast or lunch favorite!
The thing I hear the most when my friends talk about healthy eating is that it costs more than unhealthy eating. I took on the ALDI Try and Tell challenge to show you that even eating healthy can be budget (and taste bud!) friendly!
The basis of my rainbow green smoothie bowl is spinach, kale, chia seeds, almond milk, and frozen fruit. As you can see below I have brand names on the left and ALDI brands on the right. You can also see the savings I have with the ALDI brands.
Both brands are great but what is fantastic are those savings! Right? I am now enabling you to eat healthier! {wink} You can thank me later! Especially after you try this delicious smoothie bowl.
Speaking of smoothie bowls, I might be late to the game on these but they are amazing! They basically take your favorite smoothie up a notch by giving you so many options of toppings and add-ins to make it go from a drink to a meal! Ditch the straw and grab a spoon! It’s like soft serve for breakfast! Yum!
Ingredients Needed for Rainbow Green Smoothie Bowl:
- Friendly Farms Almond Milk (I used unsweetened Vanilla)
- Simply Nature Organic Kale
- Little Salad Bar Baby Spinach
- Chia Seeds
- Frozen Fruit Blend
You aren’t eating a salad so you want the spinach and kale to really be blended up well so for my green smoothies I add the almond milk, kale and spinach to my blender first. I use the juice setting on mind to give it a good blend.
You will need to scrape the sides of your blender down. It will not be completely blended at this point and that is okay!
Next I will add my chia seeds and my frozen fruit. I now use the “soft serve” setting on my blender. If you do not have a soft serve setting, no worries. Blend on a slower speed for longer and then speed up at the very end. You will be left with a smooth, soft serve consistency of smoothie. This is good. We want it a bit thicker than a regular smoothie since we are using a spoon and not a straw!
Add your smoothie to your bowl and add your favorite toppings. They can include more chia seeds, almonds, granola, unsweetened coconut flakes, dark chocolate bits, fresh fruits, sunflower seeds, pistachios. You name it, you can add it! I chose to take advantage of ALDI fresh produce at great prices and add the rainbow of fruits to the top of mine. (As you can see I also filled my bowl a little too full!) Not a terrible problem to have!
Red Strawberries, Orange Cuties, Yellow Bananas, Green Smoothie (can also add kiwi here), Blue Blueberries! It’s beautiful and so delicious!
Rainbow Green Smoothie Bowl
Ingredients
- 1 cup frozen tropical fruit
- 1 cup baby spinach, Little Salad Bar
- 1 cup kale, Simply Nature
- 1/3 cup almond milk, Friendly Farms
- 1 tsp chia seeds
- fresh fruit, of choice for toppings
Instructions
- Add spinach, kale and almond milk to your blender. Blend on juice setting if available or on high until the leaves of the spinach and kale are thoroughly blended.
- Add chia seeds and frozen fruit to blender mixture and blend again on soft serve option if available or on medium-low setting until you’ve reached the consistency of soft serve icecream.
- Add your smoothie to a bowl and top with your favorite toppings. Those can included, fresh fruit {bananas, strawberries, blueberries, mandarin oranges, raspberries, blackberries} nuts, coconut flakes, or chia seeds. Enjoy with a spoon!
