Chicken Instant Pot Recipes are a fan favorite in our home and can be in yours too with this super quick and easy weeknight meal idea! Instant Pot Chicken Burrito Bowls combine all those awesome Mexican flavors of a chicken burrito but can be made quickly using one pot in your pressure cooker.
In addition to being a wonderful one pot dinner idea this instant pot chicken recipe is packed with flavors and hearty enough that you won’t needs sides to go along with it!
These chicken burrito bowls are also great because you can customize the toppings and it pleases an entire family, even picky eaters!
How to Make Instant Pot Chicken Burrito Bowls
Chicken Burrito Bowls are a breeze to make in the Instant Pot. They cook fast, only use the inner pot of the pressure cooker (hello, one pot wonder) and they are filling as is, so no need for any side dishes!
To start you will heat up your Instant Pot and saute the onions until soft and translucent! Next, add the garlic and cook for about 1 minute! Don’t walk away, no one likes burnt garlic!
Next, we will deglaze the pot. This is important. Like don’t skip this, trust me. To do this, dump in about half of the chicken broth and use a flat wooden spoon to scrape up any of those brown toasty bits that the onion and garlic left behind. You want all that flavor in the dish not stuck to the pot.
Add in the cumin and chili powder and chicken cubes and mix well.
On top of the chicken you can dump in the remaining ingredients: black beans, corn, salsa
Last in the pot is the rest of the chicken broth and the white rice!
Be sure to press the rice down into the chicken broth so that it’s all fully submerged. No stirring, just pressing!
Add the lid to the pressure cooker and click it in place! Turn the vent to the “sealing” position and you are locked and loaded and ready to cook!
To cook, cancel the Saute function and then cook on high manual pressure for 10 minutes. Once the timer goes off you can manually pressure release the pot carefully. <–Did you read that? CAREFULLY…I like to use the handle of that wooden spoon so my hands are nowhere near the steam that will be released.
Remove the lid and gently mix together! Add in some Cilantro and you are ready to serve!

To serve your instant pot chicken dish, spoon out into individual bowls. Individual bowls allows everyone to add toppings as they prefer, making this a great weeknight family meal because everyone gets what they want!

How to Store & Reheat Instant Pot Burrito Bowl
If you happen to have any left over {wink} you can store it in an air tight container in the refrigerator for up to about a week.
You can reheat in the microwave by adding a few drops of water to the bowl and heating it covered. This will help plump up the rice again and make it not as hard as it tends to become after being refrigerated.
Chicken Burrito Bowl FAQ’s
The wonder of the pressure cooker is that it takes no time! The rice in the recipe can be tricky if made ahead so I would suggest to make when you need it!
YES! I do this often actually! I add my favorite low-sodium packet of seasonings in place of the chili pepper and cumin. I still salt and pepper the chicken as the recipe states because we want each bite to have great flavor!
Great question! This filling is great on top of scrambled eggs, wonderful as an actual burrito and has been the winner of late night snacking over tortilla chips as nachos!
YES! To use frozen in place of fresh chicken you will just need to remove the chicken breasts after cooking and either cube or shred them instead of added them cubed, to begin with! Easy! No additional adjustments need to be made to cook time, however, note it may add a few minutes to the pot’s pressurization time since it’s frozen and not fresh!

Instant Pot Chicken Burrito Bowl
Equipment

Ingredients
- 1 1/2 tbsps vegetable oil, can also use canola oil
- ½ yellow onion, medium, diced
- 1 tbsp garlic, minced
- 1 cup low sodium chicken broth, divided
- 1 tbsp chili powder
- 1 1/2 tsps ground cumin
- 2 chicken breasts, skinless, cut into 1-inch pieces
- 1 tbsp salt
- 1 tbsp black pepper
- 1 can black beans, 15 ounces, drained and rinsed
- 1 can whole kernal corn, 15 ounces, drained
- 16 ozs salsa
- 1 cup long-grain white rice
- 1/2 cup Sharp Cheddar Cheese, shredded
- 1/4 cup fresh cilantro, roughly chopped
Instructions
- Press “sauté” mode on your Instant Pot. Once your pot becomes hot, add in your oil, and onions. Stir occasionally for about 3-4 minutes until the onion starts to soften.
- While your onions are cooking, season your chicken breasts with salt and pepper.
- Add in your minced garlic to the onions. Continually stir for about one minute. Be sure not to burn the garlic.
- Deglaze the pot. Add in the chicken broth and using a flat wooden spoon, scrape any residue from the onion and garlic that may still remain on the bottom of your pot. *Don't skip this step!*
- Next, add in your chili powder, cumin, chicken breasts, Black beans, corn, and salsa. Mix well.
- On top of the mixture add the white rice. Press the rice grains into the liquid making sure that everygrain is submerged.
- Press cancel on the instant pot. Close and lock the lid. Make sure that the valve is closed.
- Set your instant pot to high pressure for 10 minutes. Once the cooking time is complete, do a manual release by carefully* turning the vent from "seal" to "vent". *use the handle of a wooden spoon or a long oven mitt
- Open the lid, and gently mix everything together. Transfer to bowls and then top with your favorite toppings. You can top with diced tomatoes, cheese, cilantro, sour cream, and more! Enjoy!
Notes
- In place of the chili pepper and cumin, you can substitute with a taco seasoning packet to save even more time!
