If you love cherries, love sugar cookie crusts and love cherry pie you will love this cherry bar dessert! Take all three of those flavor and pack them into handheld cherry dessert bars!
My father in love had a sweet spot for cherry anything! Anytime I come upon a cherry recipe I always think of him! This recipe is very easy to make and is perfect to serve as breakfast or dessert!
Pair this with coffee or serve on your brunch buffet or whip this up for the perfect after-dinner dessert alongside a scoop of vanilla ice cream!
How to Make Cherry Bars:
You will start by preheating the oven and spraying your pan with cooking spray.
Combine dry ingredients and set aside.
In a mixing bowl with a hand mixer or in your stand mixer, cream butter and sugar together.
Add eggs and extracts and blend again.
Add dry ingredients and mix until fully incorporated.
Dollop 1 1/4 cups of the dough the bottom of the pan.
Use the back of a spoon, a flat spatula or your oiled hands to spread that dough into a smooth layer.
Next, add the cherries in a nice thick layer!
Dollop the remaining dough on top of the cherry layer.
Now we will bake!
Let cool in the pan. While that is cooling, in a small bowl, prepare the icing ingredients.
Drizzle the icing on top of the cherry bars.
Cut into bars and serve!
Notes about Cherry Pie Bars:
- Spreading the dough into the bottom of the greased pan can be a bit difficult. I suggest to dollop the dough all over the bottom of the pan and then use the back of a spoon or offset spatula to spread them together. Another option would be to oil your hands and press the dough down by hand.
- I used extra cherry pie filling because I like it best. But regular cherry pie filling is great for this recipe too.
- Optional: add 1/8 teaspoon of almond or vanilla extract to the frosting for extra flavor.

Cherry Bars Recipe
Easy Cherry Bars
Ingredients
- 1 ½ cups All Purpose flour
- ½ teaspoon salt
- ½ cup butter, softened
- ½ cups granulated sugar
- 2 eggs
- 1 teaspoon Vanilla Extract
- 1/8 teaspoon Almond extract, optional
- 1 can cherry pie filling , 21 ounce, regular or extra cherry variety
- ½ cup powdered sugar
- 1 tablespoon milk
- non-stick cooking spray
Instructions
- Preheat oven to 350F. Grease an 8×8 inch square baking pan with non-stick cooking spray.
- In a medium mixing bowl, whisk together the flour and salt; set aside.
- In a medium mixing bowl, cream together the butter and sugar with an electric mixer until light and fluffy.
- Add the eggs, vanilla extract, and almond extract and beat until well combined.
- Add the flour mixture and mix just until combined.
- Scoop 1 ½ cups of the dough mixture into the prepared pan and press down to form the bottom crust.
- Spread the pie filling over the crust.
- Dollop the remaining dough all over the top of the pie filling.
- Bake the cherry bars at 350F for 30-35 minutes until set and beginning to turn golden brown around the edges.
- Cool the cherry bars in the pan until room temperature.
- In a small bowl, combine the powdered sugar and milk to make the glaze and drizzle over the cooled cherry bars.
- Cut into 9 squares to serve.
