If you have an Instant Pot or another electronic pressure cooker then you have now found the BEST Instant Pot Chicken Ever here with this recipe. You can use frozen or fresh chicken too! Yep, I said FROZEN! This is my favorite busy weeknight dinner idea and the chicken, potatoes, and carrots are all made in one pot!!

Did you catch where I mentioned that you can make this with fresh or FROZEN chicken? You read that correctly! That is one of my most absolute favorite features about my IP is that you do not have to defrost your meat! I mean for any busy parent this is just amazing news!
I feel that I should also mention that this is a One-Pot Chicken Meal as well! See those delicious carrots and potatoes?! They cooked right along with the chicken!! I take a total time saver and I use bottled Italian Dressing to cook it all in! This lends amazing flavor and all I had to do was open a bottle! No extra spices or measuring involved! So easy!
The chicken is fork-tender when it comes out of the Instant Pot. When using fresh chicken you will get a browner sear on the meat. When using frozen as I did, the chicken will just be chicken color, lol!
Both taste great in my opinion as I have made this so many times I can’t even count! I cook both ways just depending on what I have on hand at the moment.
Notes for Best Instant Pot Chicken:
Cooking Fresh Chicken in Instant Pot:
- With Fresh Chicken, you will use the Saute Feature of the IP and brown the chicken first. Sear on all sides in a tablespoon or so of oil, until the chicken has a nice brown color.
- After browning, you will want to remove the chicken and deglaze the bottom of the IP with 1/4 cup of water. Add the water while the saute feature is still on and use a flat wooden spoon (found here) to scrape all the goodness from the bottom of the pan before returning chicken and adding remaining ingredients.
- Fresh Chicken gets cooked 2 minutes less than frozen chicken.
Cooking Frozen Chicken in Instant Pot:
- Frozen Chicken is “everyone in the pool” type of meal. Everyone in and cook and enjoy!
- Frozen Chicken cooks 2 minutes longer than fresh chicken.

Instant Pot Best Chicken Ever
Ingredients
- 1 lb chicken breast, fresh or frozen
- 1 bag small carrots
- 10-12 each red potatoes, small – medium, quartered
- 1 cup Italian Salad Dressing
- 1 tbsp olive oil
- 1/4 cup water
Instructions
- Turn on the Saute feature of your Instant Pot and wait until the LED display reads “HOT”
- Add oil to pot and brown chicken on all sides for a few minutes. Remove from pan.1 tbsp olive oil, 1 lb chicken breast
- Add 1/4 cup water and deglaze bottom of pan by scraping with a flat wooden spoon to get all the seared flavor bits from the bottom of the pan.1/4 cup water
- Add chicken back tot he inner pot and also add in carrots, potatoes and salad dressing.1 bag small carrots, 10-12 each red potatoes, 1 cup Italian Salad Dressing
- Place lid on pot and twist until sealed position. Turn Vent to “sealing”.
- Use the Manual Setting and cook for:Frozen Chicken: 10 minutesFresh Chicken: 8 minutes
- Allow the pot to Natural Pressure Release. Open lid and serve!

I made this the other night and had to come back to tell you just how wonderful this recipe is! My husband, who isn’t picky about dinner and also doesn’t really care much what is on the table just raved about this meal! (He has a colostomy right now so life is pretty boring menu-wise) He first told me he needed some sauce to put on the chicken and I told him to try it first. He did and said it was wonderful and he didn’t need anything more. Then he had some carrots and said they just exploded in his mouth with taste! Really? And, he has mentioned how much he liked it at least twice AND told me last night to please put that on the menu regularly. Now, THAT’S the kind of menu item to take to the bank! Thanks for the great website and recipe! If only I had six more, just as wonderful!!!!

I soooo need to get me a pressure cooker! I just love that you can use frozen chicken, no more having to remember to get the chicken out of the freezer (which I always forget!). In the mean time, I will need to check out your slow cooker verison!

Are you kidding me? It only takes 2 minutes longer to cook frozen chicken than fresh in an instant pot? See, THIS is what people need to tell me to convince me that I need one, lol! I’m all over the one pot meal idea and the idea of using italian dressing to speed things up, especially on nights when our schedule is just crazy. This sounds delicious!

This is the first recipe i am going to try in my new instapot! I’m still trying to figure out all the buttons… when you say cook frozen chicken for 10 minutes… that means press the pressure cook button, move the time down to 10 minutes and cook? Should the pressure level be on high pressure or low pressure?

Hi Geena! Welcome to the InstaPot world! Yes, exactly what you said! It will take a few minutes for the pot to come to pressure and then the 10 minutes will count down. High pressure also!

Wow! This was amazing! This was my second meal made in my IP and so far I’m so impressed. I used Greek dressing and we served it with tzatziki. Yum. I have one question. The recipe instructions say to use NPR, which took about 20 minutes. I noticed another poster asked about pressure release time and you said about 20-30 seconds. So, would this work just as well doing a quick release? I’d love to save some time if possible. Thanks for your newbie instructions, and some great recipes!

Hi this sounds yummy! I have everything to make this but a bottle of Italian dressing. I do however have a package of good seasons zesty Italian dressing mix and the ingredients to make it. Will that work? I’m going you see this soon as I wanted to make this tonight.

For a throw in the pot and do basically nothing, this was very good! I only used 1/2 bottle of dressing because that was all I had. My family really liked it.
