I have a side dish that even my “curled up nose-always has to comment” child eats and loves! Easy Roasted Carrots with Thyme. He even eats them with thyme, or as he lovingly refers to any herb as “green stuff”. Not only do the kids eat this, we love it too. Easy and inexpensive and healthy side dish to add to any entrée!
I am pretty lucky though. My kids do eat their veggies. My younger two eat any and all with absolutely no apprehensions whatsoever. My oldest eats all his vegetables but never without a comment or eye roll…you know because he is 9 going on 19.
These roasted carrots with thyme are sweet and I find myself making them at least once a week. I use both whole carrots that i slice up and also just a bag of those baby carrots. Whatever is on sale or whatever I feel like buying. This recipe is flexible!
In a bowl, I mix the carrots, olive oil, salt, pepper and thyme. I spread on a baking sheet and toss in the oven. Most days, I even skip the bowl and I just mix everything all together right there on the baking sheet. No sense in dirtying another dish! Be sure not to overcrowd them on the baking sheet. You will end up steaming them and not roasting them if they are too crowded!

- 12 Carrots or 1 bag of small carrots
- 2 tablespoons olive oil
- salt & pepper to taste
- 1 tsp dried thyme
Instructions
- Preheat oven to 400F
- Peel carrots. Slice in quarters and then in half to create spears
- Combine carrots, oil, salt, pepper and thyme in a bowl and toss to coat.
- Spread evenly on a baking sheet, do not overcrowd.
- Bake for about 20 minutes or until carrots are fork tender

I make this any time I have carrots on hand. So yummy! Good quality olive oil makes a huge difference as well.

My husband likes his carrots kinda mushy – do you think this would work if I steamed them a bit first, then added the seasonings and roasted?
